Exciting things are afoot and I’m unable to concentrate properly on anything much. Can’t think of a single thing to say about the below meal except that it consisted of Silvana Franco’s lamb and bulgar burgers (recipe here) and oven baked sweet potato chips; it’s far lower in fat and calories than your average burger and chips; and it was delicious.
That’ll have to do for today!
Sweet Potato Chips
1 medium sweet potato per greedy person
Olive Oil
Smoked Paprika
Salt and pepper
- Pre-heat oven to 220oC.
- Peel sweet potatoes and cut into thick batons. Drizzle with olive oil and sprinkle with the paprika and seasoning. Toss well to coat.
- Roast in the oven for 30 minutes turning occasionally.
Looks like a great meal to get stuck into!
