Nam nam nam. Need I say more?
Cumin Roasted Cauliflower
1 large head of cauliflower, cut into florets
1 heaped tablespoon ghee or 2 tblspn vegetable oil
1 tablespoon cumin seeds, ground roughly with a mortar and pestle
1/4 tablespoon coriander seeds, ground roughly with a mortar and pestle
Salt and pepper
- Add the cauliflower to a pan of boiling water and cook for 1 minute. Drain well.
- Heat the ghee in a small pan over a low heat. Add the spices and cook gently for a minute or two being careful not to burn the spices.
- Add seasoning to the oil then toss with the parboiled cauliflower.
- Roast in a 200 oC oven for approximately 15 minutes or until the cauliflower is golden brown.
Sounds like a good use of the ubiquitous veggie! Spices + fibre = … flavour? 😉
mmm love roasted cauli and even better with spices
This is certainly something that I will try out today! Seems delicious!
I haven’t had cauliflower for such a long time but this is tempting me. Nice idea Wendy.
perfect timing! I have some purple cauliflower in the fridge from last weeks Farmer’s Market and was wondering how to cook it so the colour doesn’t fade as much as when it’s boiled. thanks heaps for the inspiration. Nic x
This looks such a tasty idea that I am going to try it soon. It is nice to see a good variation for cauliflower. During the summer there was (bad) news that cauliflower was getting less popular because broccoli was being promoted so much as a wonder veg. We love both in our house.

Oh, yum, yum, yum!
Is there any veggie that is not just transformed by roasting? Cauliflower is surely one of the best.
No. No. No. You needn’t say more. Nor shall I. : )
Wow, looks good. I’ll have to try this tonight.
