So, I love my eggs. This has been said many, many times before. No surprise then that when a neighbour suggested the following recipe to me as I bought a big, leafy bunch of celery from the monthly local market, hard boiled eggs immediately came to mind. A lovely condiment to have around.
Celery Salt
(adjust quantities depending on how big a pile of celery leaves you have)
3 cups of celery leave
1/2 cup sea salt flakes (Maldon is perfect)
- Chop the celery leaves roughly and scatter across a baking tray. Bake at 75 oC for 2-3 hours until dried out and crispy.
- Add celery leaves to a blender removing any bits of stalk. The leaves will have shrivelled to approx. one cup. Add half that amount of sea salt and whizz in a blender until combined and fine. At this point you could mix in a couple of teaspoons of ground pepper for a more complete seasoning.
- Store in an airtight container.

Neat recipe, defo one for my scrapbook. We had the cheesey leek mash last night with dinner….. I made a pile of it, so we can have it again tonight!
Actually, I’m going to make up a Mornay sauce, chuck in some smoked fish and use the leftover potato/leek mix as a topping for a fish pie… comfort food, it’s the best. x

Thanks for posting this! Something else to do with the celery leaves, normally they end up in stock for soups, but I love celery salt, I’d never thought of making it myself.
brilliant – I don’t like eggs but I hate throwing out celery leaves and I am sure I could find another use for celery salt (let me know other ways you are using it)

What a neat recipe to have! I’ve started my own kitchen garden this year, and have inherited and transplanted a huge celery plant from my 90-year old granny. I expect it to produce lots of celery leaves later this year 😉
