Easy Peasy Lemon Squeezy

Light Mackerel Pâté

Whizz one part smoked mackerel (I like the peppered kind) and one part cottage cheese in a food processor for a few seconds until combined.  Add a squeeze of lemon juice and some chopped parsley.  Done.

    In fact Lidl do a virtually no-fat cottage cheese which would make this superbly Lo-Fat AND tasty .
    Bread looks delicious too . Did you make this yourself or are you lucky enough to be able to buy this locally ?

    Just had this for supper, It was delicious.

    I spread the pâté generously on little shop bought Melba toasts and crunched my way through eight of the little blighters before I remembered that I’m supposed to be watching my waistline!

    Even using low fat cottage cheese …. though , in retrospect , my decision to use the stick blender wasn’t sensible !

  6. Made it last night and didn’t whiz it at all as hubby likes “chuncky” pate. Just mixed it together until well combined. Then ended up at neighbours house so took it along and was a huge hit! So glad I tried it.

    @ Geraldine – I used fat free cottage cheese and it was wonderful!
