Sunny Sunday Salmon Salad

Half a tin of butterbeans, a big handful of watercress and/or spinach, one cooked and on pre-cooked salmon fillet, flaked.  Toss with lemon and olive oil.

Eat sitting in the first pool of sunshine to hit your favourite room in over three months!

    Shuhalee – Abosolutley nothing at all. This was a speedily prepared lunch for me so I used a pre-cooked salmon fillet.

  2. I can’t wait for spring! This looks lovely and although I love the big hearty meals we have in winter, I think as soon as we get a sunny day, this will be on the lunch menu!
