Last week I was lucky enough to fly to the United States and be an instructor at the John C Campbell Folk School in North Carolina. Where do I start to tell you what an amazing experience this was? The area is stunning & the locals simply lovely. The school itself is so inspiring and welcoming and well run; can’t recommend it enough. Runny marmalade aside, my course went well and the dishes were delicious. Loved having a great big kitchen as my office for the week and my four students were delightful learners and company.
I’ll post some of the recipes we made in the coming weeks and months. Until then, here are some photos of the week.
I totally forgot about that course! I wanted to attend and would have loved to have met you!! It was quite a distance from where I live on the coast. I was going to try and get a friend to attend the class with me and to help with driving. I guess life got in the way! I’m glad you enjoyed your visit to the Tarheel state.
Oh Gale, I’m so sorry I didn’t put a reminder on the blog. It’s been such a busy year, this space has been neglected terribly.
GREAT!! I have a friend who just came from there and must ask if she saw you. She will be teaching there next year and has been going for years and loves it. So glad you got to be there.
So, what did you treat them to?
45 recipes in all. Including soups (cockaleekie, cullen skink, broth…), oatcakes, sweet baking (scones, shortbread, victoria sponge…), jam, chutney and lots more (venison stew, shepherd’s pie, tattie scones…). It was great fun.
It really does look like a marvellous place ! Everyone should have a college like this within reach , especially now so many families are spread far and wide .
You’ll have begun a cullen skink takeover in North Carolina , I expect ! I
I’m going to have to have another go at tattie scones ( we always bought ours ready made in Glasgow . ) not to mention the oatcakes .
