Rocket and Walnut Pesto

Summer in Scotland has, thus far, looked like this.

My vegetable garden is protesting.  So much so, there is only one thing growing successfully: rocket.  It’s a hardy wee bugger.  The other plants are hunched and shrivelled and staring sulkily at the cold, grey sky; the rocket, though, is just getting on with the job of being all green and tasty.

Well done, rocket, well done.  Take centre stage for once…

Rocket and Walnut Pesto

75g rocket

60 g walnuts, toasted briefly

60g parmesan cheese, grated

Juice of 1/2 lemon

1 garlic clove, chopped (Not two, David.  Not two!)



Extra virgin olive oil

  • Whizz together the walnuts and chopped garlic in a food processor.  Remove to a bowl.7
  • Add the rocket and a good glug of olive oil.  Whiz until just chopped.  Add the walnuts, garlic, cheese and lemon juice.  Whizz until it looks like pesto.
  • Stir in salt, pepper and possibly some more lemon juice to taste.

  1. My grandparents were from Scotland and I have loved my visits there! I love your photos and recipes but I’m not sure what rocket is. Is there a North American plant equilivilent to rocket? Donna C.

  2. Where we are in Scotland looks just the same although we have had a few scattered sunny days. Fed up with this now and ready for some good weather!

  3. I doubt if rocket/arugula would grow like a weed where I live. It’s too hot after about early May for tender greens.

    And to Jane! We have a green leafy vegetable in the South called rape. What would you find if you just googled rape? If you don’t add greens to rocket, all you get is NASA rocket info. Google rape why don’t you? Wendy has followers around the world and in different parts of the world there are different names for common used produce/products. I have followed this blog for years and I have never seen a snide comment until today.

    Sorry Wendy. I just had to vent a tad. I am so tired of political correctness and snide remarks on people’s blogs. I am from the school if you don’t have something nice to say, don’t say anything at all.


    ps. I do wish you had more time to post more of your delicious recipes and a little more about what’s going on in your beautiful part of the world. I miss Marco!
