Carrots and Chickpeas – Part 2


Not really a recipe.  Just a really good idea for a quick, healthy breakfast or snack.  Toast a thick slice of crusty bread and top with hummus, grated carrot, a squeeze of lemon and a little parsley.

  1. It looks like it would hit the spot for breakfast or a snack! It reminds me that I need to make a run to the organic market for some Roots hummus. It is made in Asheville, NC, and it is some of the best store bought hummus I have ever eaten. I have not been successful trying to replicate it. If you have a good recipe, please pass it on!
